Tomato, cucumber & onion salad

On a hot summer day, this is one of my favorite salads. It is light and easy to make. It has the slight bite from the apple cider vinegar and the dill and the light creamy texture from the mayo. I feel like you can taste the freshness of the tomato, cucumber, and onion. I think this dish can be a great side. It can be eaten by itself and or can be paired with other dishes.



Ingredients for salad:

  • One whole English cucumber

  • three Roma tomatoes

  • one small red or white onion

  • 1 sprig of dill or dried dill.


Instructions for salad:

  • peel and dice the cucumber into desired bite size chunks.

  • slice and de-seed tomatoes if you don't want the salad to be too watery, otherwise just dice tomatoes.

  • finely dice onion.

  • finely dice fresh dill or pour desired amount of dill.


Ingredients for salad dressing & instructions.

  • two scoops of mayo

  • a splash or red or apple cider vinegar.

  • pinch of garlic powder

  • add salt and pepper to your liking.

  • combine wet ingredients with dry ingredients.
